
Makes 4-6 servings

Soak 24 hours
olive oil
splash of vinegar
4-6 large carrots
1 onion
1-2 tspn dried oregano
pinch salt
pinch pepper
1/2 kg white Beans
1. Look through the beans, make sure you take out rocks, and funky beans you don't want to eat.
2. Soak the beans overnight in water and a splash of vinegar
3. Drain and rinse with warm water
4. Sauté onions until almost translucent, add in carrots, finish sauteing until onions are translucent and carrots are soft.
5. Coat beans in olive oil, add it all to a big pot with Oregano
6. Add water to cover and bring to a boil.
7. Once it boils, bring down to a continuous simmer, cover with a lid, leave the lid slightly cracked.
8. Cook for four hours to desired softness. Add salt and pepper to taste.
9. Using cooking spoon, smoosh some beans on the edge of the pot and mix bac in. Do this until desired consistency.
